Young Chefs Academy

We can now identified 24 colleges delivering the Young Chefs Academy - each of these offer places to enthusiastic 14-16 year olds.

Of the 24 the majority are operating the Compass Junior Chefs Academy - Compass are to be acknowledged for the huge investment of time and resource that such a committment requires.

Programme Information

This excellent 10 week programme, generally taking place on saturday mornings has been developed by Compass to offer young chefs an introduction to cooking at college:

Supported and endorsed by industry this is an excellent example of industry and education collaborating to provide valuable skills for enthusiastic future talent.

 

Programme Content:

How to work safely and hygienically following the health and safety rules that apply to a kitchen environment:

Learn what constitutes hazards within a kitchen

Knife skills and safety rules

Personal Hygiene and protective clothing standards

Using basic Kitchen equipment safely and appropriately

Dietary and nutritional awareness with regards themselves and others who may have special dietary requirements

Identify the 5 main food groups

  • Bread cereal and potatoes

  • Fruit and vegetables

  • Milk and dairy foods

  • Meat fish and alternatives

  • Fatty and sugary foods 

  • Prepare food, cook food and clean work surfaces and equipment

Learn how to prepare and cook the recipes for:

  • Pizza

  • Chelsea Buns

  • Cream Horns

  • Spicy Roast Chicken

  • Victoria Sandwich with Butter cream icing

  • Fresh Pasta

  • Risotto

  • Chicken Pie

  • Chicken Teriyaki

  • Noodles and Stir Fry

  • Flan Normande Sweet Pastry

  • Choux Pastry products

  • Moka Gateau

In the final week students prepare a three course meal for family and friends to celebrate their Graduation with a celebrity chef.
